I love cacao beans from the Piura region in Peru because they produce a chocolate rich in citrus notes and no bitterness. When Denise Castronovo and I first tasted them together, we paired them with a Colombian mandarin: it was love at first bite. You can now taste that memory in a bar that combines these magical beans and the tangerine. It’s fantastic with an orange cocktail.
