Castronovo Chocolate 63% Dark Milk Chocolate

Ever heard of dark milk chocolate? You have now. The term refers to milk chocolate with a cacao percentage greater than 50%. This type of chocolate offers the intensity of dark chocolate, without any of its edge. A best of both worlds situation, if you will.

This version by Castronovo Chocolate is a benchmark in its category. It pairs well with bourbon, whisky, as well as black coffee. I like this bar so much, that eventually met one of the farmers growing the cacao beans in this bar. The year was 2019, we were in Sierra Nevada de Santa Marta, Colombia, and that’s another story for another day.
